So Excited!!!

OMG - I can't believe it! 
So I have been tracking my page views for the last 3 weeks or so and they are just growing, growing!!! Check this out!! (I know the photos aren't great, I'd love to learn how to screen shot and then save the photo to crop :) )

On 9/11, I had 6,000 views, just about 2 weeks after my 1 year Blogiversary!


On 9/24 (just short of 2wks later), I went up 200 views!!


and Today, on 10/3 (1wk3dys later) I now have 6,403 (before writing this post!)
UPDATE: 6,420 views just after posting!!! 

I would LOVE it if I could get up to 6,500 views by 10/11 (8 days) - that would be 500 in 1 month!!! AHH as of now I was averaging 200/month (6,000 views in 12 months). Wow this is crazy! 
OMG UPDATE: 9:06am on Friday - 6,510 views!!! I just can't believe it! 


Plus my Twitter followers are sky rocketing! Yesterday I posted about getting to 300 and today I'm already at 329 (as of 11:45am)!
I have been doing a lot of Bloggy Moms hops! This week was for Twitter - hence all my new followers :) and last week I did one for Facebook and the Blog! It is such an awesome feeling to be growing like this - and people are reading my words! 
Woah wait a minute, that's kinda scary too!



Ok, Now that I've gone a bit crazy, let's get a baby update! We hit 20 weeks!!! Woo hoo
We don't have an appt for another 2+ weeks though, which makes me stir crazy! I can't wait to get them closer together!

We have received our first round of gifts too!!!

I just found out, officially, that the playard is from Grandma Greta!! The nursing pillow & cover is from my amazing Cousin, who is 22 weeks herself! It is so exciting to be going through this journey as FTM's together!
I bought the diapers - they were $30 for all 5! I was so excited! and YES we are going cloth, I am just ecstatic about this as well!



If that wasn't all enough to chatter on about, 
let's get to this weeks THRIFTY THURSDAY!!
I've started getting comments and I am loving it! Please do keep letting me know what you think of my Features and if you have anything you'd like to be Featured!!
Not to throw anyone off, I absolutely have a food post to Feature this week!

These Pumpkin Spice Latte Muffins look so amazing - and right up my alley!! Side note - the Pumpkin Mocha latte at DD is amaazing! I have to limit myself though, of course!


And I can't forget the Peanut Butter Pie - hubby is dying for me to make this one for him! Yesterfood has some seriously good recipes!!


I had to include these Ham & Swiss Lasagna rolls they look so awesome - I am not a fan of swiss, or cheese in general, so I would try to find a substitute :)



Just to be a little different I am adding an extra Feature - NON food related!!

Fun Dinner #2: Turkey Burgers


I hope you love my Fun Dinners as much as I do!!

Today I want to tell you about our Turkey Burgers!!!
We were totally those people who would never have considered Turkey Burgers ... too healthy! lol Well, when I started my weight loss journey back in April (2012) I came across this video on Healthy Fast Food Burger & Shake ... I have not done the shake (frankly, I'm not brave enough!!)

Recipe
1lb Turkey meat
1/2 cup Milk (I use lactose free)
1 Egg White
2 cloves Garlic
2 tbspn Low Sodium Soy sauce
1/2 cup Whole Wheat Bread Crumbs (I use WW Panko BC, but if I'm out I use regular Italian style BC)
Preheat oven to 400 degrees. Brown both sides of burgers on stove top, then cook in the oven for 15 minutes!
I use 1.35lbs of turkey meat and make 8 burgers and freeze 4!


My weight loss journey is definitely fodder for another blog post ... but I just want to give a HUGE Thank You to my Bestie Nikkie for her support the whole time, check out her awesome Page as well, she is truly amazing and I am so blessed she is my friend! .... Please keep a look out for this post to see how I am down over 20lbs since April - and still going!

Steamed cauliflower and finished turkey burgers!


We normally make Sweet Potato Fries with them (as in the video), but I forgot to get the sweet potatoes at the store! So we had steamed cauliflower and Mac & Cheese :)

These are just so awesome and I love to make that 2nd batch so it's a quick and easy meal we love!

Fun Dinner #1: Cheeseburger Wraps


There are days (weeks) when I cook fun dinners ... then there are some where I just don't, or I stick to something easy, such as pasta (I love when its BOGO!)... or frozen pizza (like last night)  :)


Earlier this week we had a few dinners that we love! 

Cheeseburger Wraps! (from Skinny Girl) - I found this recipe on Pinterest, of course!
  

RECIPE
Cheeseburger Wrap
Servings: 5
Serving size: 1 wrap filled with 1/2 cup beef, 1 slice cheese, lettuce, tomato slices, ketchup, and mustard.
Approximate nutritional information:
Calories: 329 * Carbs: 21 * Fat: 15 * Protein: 32 * Fiber: 9
Ingredients:
1 pound ground beef (I had about 1.35lbs)
1 tablespoon Worcestershire sauce
1 tablespoon ketchup
1 tablespoon grated Parmesan (I didn't use this)
1 teaspoon dried onion flakes (I didn't use this)
1/8 teaspoon pepper
1/8 teaspoon salt
5 100 calorie wraps (I used flour tortilla - might not be 100 cal)
5 slices sharp American cheese (I had shredded Cheddar)
2 Roma tomatoes, sliced (I used only 1, since I'm the only one who likes them)
1 cup of romaine lettuce (I didn't have lettuce)
Optional: Sour Cream, Additional ketchup, & Mustard

Directions:
Step 1. In a medium to large skillet coated with cooking spray cook the beef on medium till almost cooked through but still a little pink (about 7-10 minutes). Break beef up as it cooks.
Step 2. Add Worcestershire, ketchup, grated Parmesan, dried onion flakes, salt, and pepper to the beef. Mix together until thoroughly combined.
Step 3: Continue cooking until beef is cooked all the way through and is no longer pink.
Turn on indoor grill to 350 or you can also use a grill plan. I happen to have a Quesadilla Maker, that works just as well :)
Step 4. In the center of  the wrap place a slice of cheese and 1/2 cup of the beef mixture. Add tomato and lettuce. Then, if you are using, add some ketchup and mustard.
Step 5. Roll the wrap and place seam side down on grill. Once there are nice grill marks turn over. Grill for another 2-3 minutes then remove. (With the QM, I didn't have to flip!)
Repeat steps 4 and 5 for the rest of the wraps.

I've really gotten into the hang of taking photos of everything I do! Here's a step by step of the Cheeseburger Wraps!

Here are the steps to follow: browning the meat, laying out my wrap and adding the cheese & meat.

Then there are the options: sour cream for hubby & tomato for me!
