Thrifty Thursday #22






Welcome back!! 
I have a special treat for you this week!
Remember last week, I shared that awesome looking dinner from Busy Mom's Helper - Creamy Cauliflower Pasta??
It took me all week to actually do it, but I made it this week!  
I was constantly missing 1 thing ... Cauliflower!

This recipe did take a lot longer than I thought it would but we loved it!
It made so much we both had it for lunch the next day, and still some left. Which we ultimately ended up tossing because we couldn't eat the same meal 3x's :)




Ingredients
1 tsp. Olive Oil
3 cups Cauliflower, chopped
3 medium Shallots, chopped
Salt and Pepper, to taste
4 tsp. Flour
4 cups Milk
1/4 tsp. Nutmeg, ground
2 cups Parmesan cheese, shredded
1/2 lb. Pasta Shells
1 cup Ham, sliced, smoked, chopped
4 cups Broccoli, cut
1/2 cup Bread crumbs

Directions
In a medium saucepan, heat the oil over medium heat. Add the cauliflower, garlic, shallots, and a bit of salt. Cook until soft, about 10 minutes. Stir frequently so garlic doesn't overcook.

Add flour to the saucepan and toss to coat well. Stir in the milk and bring to a boil. Reduce heat and simmer until cauliflower is very soft, about 15 minutes. Allow to cool for about 5 minutes, then pour into a blender, adding the nutmeg and half the Parmesan cheese. Blend until smooth.

Preheat oven to 400 Degrees.

Bring a large pot of water to a boil, then add the pasta and broccoli. Cook until just slightly tender, about 5 minutes. Drain, then return pasta and broccoli to the pot. Add the ham and cauliflower sauce, tossing to combine.

Put into a 3 1/2 quart sprayed baking dish. Sprinkle with the remaining Parmesan cheese and bake until center is bubbly, about 30 minutes.

I did attempt to multitask and cook things simultaneously, but that only left the pasta ready and waiting for the cauliflower sauce :)

On that note, you may want to let the sauce sit for more than 5 minutes to cool! I learned the valuable lesson that enclosed heat will make the top explode off your blender :)

Thrifty Thursday #17 & Happy Birthday!





I can't believe it's Thursday already!! 
Do I start all my TT posts this way?? :)

It's been crazy days, I missed last weeks post as I was in NY visiting family for most of the week! 
 
 


A HUGE Happy Birthday goes out to my Brother (5/23), niece (5/22) and Grandma (5/20), who all have birthdays this week!! Late May is my favorite time of year on Long Island! I wasn't as lucky to have the normally beautiful weather though on this visit. It was great Thursday but cloudy & rainy through the weekend.

Thrifty Thursday #15





I am behind yet again! Story of my life :)
I still haven't even told you all about our SECRET weekend!!

We went to DISNEY!! We surprised Riley, she didn't even know until we got off the turnpike for our hotel! She slept through the better part of a 2+ hour drive!


I promise I will get a post out for you on this! We took so many pictures, even had some good ones taken for us at Disney. However I can't share those unless we buy them, so we'll see :)

Thrifty Thursday #14



Here it is, Thrifty Thursday again! I am excited to say I have finally done my first month of meal planning! I haven't gotten it on a fancy calender yet, but I am following it! I will show it all to you soon! If you didn't see last week, I get my inspiration from Chrissy, who blogs over at Parlo & Logi! I've been eyeing her posts for months and it really is easier than you'd think, you just have to get in and do it!

Anniversary & Giveaway

Two years ago (tonight around 6pm) I married the love of my life, and my true best friend. We have had such a great 2 years and look forward to many, many (78) more.

Here we are, 2 years ago.

Here we are, just yesterday!


We had such an amazing weekend together. Starting Saturday, with me being able to sleep in (my fave), while he went to the gym (his fave), then he brought me home a dark chocolate mocha latte from DD. We sat around, then headed out for our 3 hour relaxing spa time. We were served lunch, quiche, cucumber, apple slices and chicken noodle soup, in a tea cup!, followed by dessert, of pound cake & brownie with honey, white chocolate, strawberries and cool whip ~ plus everything was organic! I also had a Mimosa of champagne and organic tea :)

After lunch, we laid around. The place was called "A Day of Delight" in Stuart, FL, and the setting was just gorgeous, and the people were SO nice! 

After laying around we had a couples massage with body scrub and a wax paraffin hand treatment! This was so cool, we dipped our hands into a "crock pot" type thing filled with hot wax, then our hands were wrapped in plastic and we sat around for 10 minutes. When it was time to remove the wax just peeled right off our hands. I wish I had gotten more photos of the hand wax and couples massage room, there was a trellis with interwoven vines, flowers and lights hanging above our heads, it was so cool!

We finished out the night by having dinner at Miller's Ale House in Jupiter and watching the UFC fights on PPV (Go Bisping!!) 



We started our morning the same way on Sunday (Sleeping and Gyming), less the latte (not sure why...). In the afternoon, we took a (beginners) Trapeze Flying class, at Aerial Trapeze Academy! It was so amazing! I was a bit nervous, which comes out as my potty mouth, haha. But after it was done it was great! 
We learned to do a knee hang from the bar, and stretch out to look for the catcher, and also a back flip dismount! Out of my 4 tries, I did both things twice! I didn't make it as far as Tyler, who actually got to do the mid-air transfer to the pro, but I was proud that I made it as far as I did! Tyler did really awesome, and I wish we had brought our phones or camera, but we are definitely returning and will take pictures and video next time!


We also had plans to go to dinner and a movie on Friday, but that got pushed aside with all our crazy activities, but we'll get there! 




NOW for the fun stuff! I have my VERY FIRST GIVEAWAY coming up REAL soon, from It Works! Stayed tuned for more info on that!! I will be starting my own kit as well, I am SUPER excited!


PLUS we have an amazing, secret weekend planned and I can't wait to share it all with you!! Make sure you look out for all this exciting stuff coming up!!
